Flat Bottom Dripper - Easy Brewing Guide

We find that for beginners in brewing, flat bottom brewers such as the Fellow Stagg X, Kalita Wave, April Brewer are easier to control and get more consistent results out of. Learn more about the difference between flat-bottom brewers and cone-shaped drippers in this blog post.

Our favorite simple go to recipe is the following:

1) Heat water* up to 92-93°C

2) Grind 13 grams of coffee medium fine

3) Wet the paper filter, brewing device and serving vessel with hot water and discard it

4) Put your brewing device on a scale, fill it with your ground coffee and start the timer

5) Pour 80 grams of water: the first 40 grams in a circular motion covering all the coffee grounds and the last 40 grams in the center of the brewer

6) After 45 seconds pour another 80 grams of water in the same fashion

7) At 1:30 pour the last 40 grams of water for a total of 200 grams and wait until the water percolates through the coffee grounds (this should happen between 2:30 and 3:00 minutes)

8) Set the brewing device aside, swirl the serving vessel to mix the coffee, smell its delicious aromas and serve it!

Most coffees might taste slightly flat at their hottest, so we recommend to wait a couple of minutes before enjoying it.

* Using the right kind of water is absolutely key for the success of your pour-over. Our custom roasts are dialed in with softer water between 50 and 80 ppm, containing balanced levels of calcium and magnesium. In Switzerland we generally advise to use tap water in most mountain regions or filter your tap water with a Brita filter in case you’re living in the northern part.
